Formerly working as a maintenance tech for a nursing home we installed FRP
( fiberglass reinforced panels) around the sinks and dishwasher in the kitchen.

Put up the same stuff as kitchens . I think it's called backsplash. I comes in all kids of colors and patterns, or even just vynil adhesive shelf paper.
Apply 2 coats of Kilz2 primer, it will seal the drywall. You could also attach a sheet of plexiglass for added protection and easy cleaning. Best of luck.
