The versions you have seen with the cubes on each end are more than sturdy enough - just use quality raw materials. You get what you pay for . . . I used to use my mom's dining room table with the protective pads, I would have jumped for joy if we had room for the cubes with a good, thick smooth wood surface to work on.
I always used my d.r. table for cutting out patterns and laying out fabric etc. (also for paint projects. . .not so good for the table!) I have a 4' X 8' work table in my basement bought from a friend for $25. My daughter is the costume designer for the high school in her town and does a lot of sewing for them. . . she has a beautiful d.r. table and uses that. But probably with the pad on it.
I have a cubed cutting table. I used a cube unit at each end and a unit in the middle, front & back. So 4 cube units all together (I have a lot of fabric). I got a piece of birch plywood and had Home Depot cut it to 3x6. I use a cutting mat on top of it. This table is heavy and absolutely sturdy.
I too have used the dining room table in the past because even the ones you purchase don't have enough room to put a whole pattern on the fabric. I used a ping pong table once when I first started sewing when I was in home ec in school. My mom had an old black singer that was one of the first electrics.
I bought them at Walmart. The two in the middle, I pushed in a little bit so I could pull a stool in.
Yes they have the 9 cubes. the first one was tricky but the others went very easy. What I would do different, would be to put them all on locking casters so that I could move the whole unit around. I did add command hooks on some of the ends so I could hang scissors, measuring tape, etc. If you make one that big, Joanns does carry an Olfa cutting board to fit it. Comes in pieces. works well.
