They have to be stripped or sanded. You can rent a sander from Homedepot or Lowe's, for a nominal fee, on a 24 hr cycle. sanding is probably the best way to get the varnish off. You have to know how to do this, or your cabinets will not look professional, when the painting is done. If you decide to paint, start by removing the hardware, and the doors. Use high-gloss paint, so it's easy to wash. The hardware can be spray painted or buy new, but it's pricey. Paint the doors on a flat surface so you have no streaks, or globs. If you decide to varnish again, varnish the doors flat. EJL
Sand.
Try AWESOME. You can get it at one of the DOLLAR stores. My husband uses it to remove shellac from sewing machines. Just test it to make sure it doesn't harm the wood.
