yes, i would paint the trim to match the counter.
I would not. Looks in great condition. That trim was used in the 80's to cover particle board edge on laminate counters to give the a "high end" look rather than a rounded bull nose edge. The paint can easy be scratched or flaked off when the counter is used. Just leaning against it can mar the paint.

No, I wouldn't. Paint will wear and come off in areas as you clean the counter and look worse. I'd just clean the wood and use a lemon oil on it when you do the cabinets.
