They're all the same way for a reason. It's the best way to do a good job. The person who did the original job probably didn't have youtube. :)
I agree with Linda, they are all the same for a reason. There really is no other way to do it that would be right. We usually do the drywall ourselves and hire out the taping and mudding part. We redid a whole basement ourselves and only hired out for the taping and mudding and carpet installation.
There is an easy, fast way and the right way..... if you want easy and fast... hire a PROFESSIONAL to do it... I think you found out the hard way that "cheap" did not get the job done inexpensively.... NOW you will have to hire someone to come in and finish the job correctly.

find a friendly plasterer and ask him to do a quick skimb eric
