Since you are picking up copper from your plumbing, wouldn't the best answer be to replace your pipes with CPVC? Stuff is cheap, easy to work with, and does not corrode.
The expensive way is to put the copper in then take it back out. Here is a page from the CDC about copper in drinking water: https://www.cdc.gov/healthywater/drinking/private/wells/disease/copper.html
I would suggest that you ask your water company. If you have well-water only you may need to talk to a reputable plumber.

There are crystals a plumber can install on the incoming water pipe, straight from the source. It should make all your water less acidic and protect all your pipes.
