To the best of my knowledge, you can't really use a roller,or brush of any kind. The texture will come off. The only way I know how to paint it is with a paint sprayer.

I'd get a sprayer. Some of the popcorn crumbles will come off when touched and get into the roller. Either that, or brush the ceiling well with a broom first to get off any loose particles.
