Copper is the best. Galvanized pipe is second. CPVC is third. Pex (crosslink plastic) would be fourth. Check your building codes what is permitted. Also check with your homeowners insurance carrier.
Use pex tubing. It is cost effective, withstands freezing and extreme heat, it is flexible, and the connections are simple to use. We are replacing everything with it and it is wonderful.
The Pex tubing is what our plumber friend has been using when he helps us with anything. Donna is right, they are easy to use. He said it is what everyone is going to now. He works for roto rooter, being a pretty much national and popular company, he would know what the coming thing is.
Most plumbers would take copper pipe over flex pipe. Pex pipe is ok when you have to replumb old homes and get into tight spots.
