Slow and make sure it is sharp or use a utility knife or something not serrate.
Before you cut it thru find out if the center is the same as the sides you may need to do some repair. Some of the foam mattress are built in layers that are concealed along the outside edges. You may have to do something to keep a center layer from squeezing out on the cut sides during use. I would suggest that you have some glue on hand to attach any layers together, should you find your mattress constructed that way.
You could find a foam store that has a special wire machine for cutting foam to do it for you to get a clean line. Then if its a Tempurpedic have the cover cut down into two covers.
