Have not tried it yet, but I was told to rake the fallen leaves up to the trees and go all the way around them to help cover the roots and then they revert back into the soil in the spring.
Mulch will look nice, but make sure it isn't too deep, or that it piles up next to the tree trunk, called a "volcano" effect. That will kill the tree, eventually.
