I do notice the riser is broken in your picture, is that what you are referring to? If so, then you would have to pull off that riser and install a new one. They are available at Home Depot for about 10 dollars each.
You might consider MDF board as thick as the gap, and use as Panels. You could leave length as is or cut at an angle, then if you want add a rail.........
If you're steps are standard height, you could buy stringers (Lowe's for a 6 step stringer is $16) Flip it upside down and you can nail it to the wall. If then are lower than average, you could cut a 1 x 6 to fit the stairs. You could top it off with some quarter round, for fancy's sake.
It looks like you have room to place a plank the proper thickness all the way down the side. I would sand and prime the board before installing it in order to make your painting job easier. You can also purchase molded edges to glue to the steps or patch the present edges with plastic wood which comes in a tube or small container. Sand off and prime and paint.

Something I forgot is that you would have to trim the bullnose off the step a bit so the stringers or cut 1x6 fits up against the riser. Shouldn't be too hard. (a pain but not toooo hard;)

That was just what I needed! Hurray!! TY
The before and after of what you hope to do is beautiful. If you do as you say you plan and fill the holes and sand and repair, then you could paint the treads with a dark color, even charcoal or black! The uprights under the treads could be done in various ways. I've seen pics where they've used metal such as license plates, or painted numbers on them, or names of family members, or words to inspire. For the edges take the measurements of the uprights and the treads and purchase "1/4 round" from Home Depot or Lowes. They might even cut it into the size pieces you'll need. I'd paint these whatever color your wall or uprights might be before nailing them into place. You can use small nails and countersink them (meaning hammer the nail in, then take a small punch tool to hammer the nail in below the surface of the 1/4 round. Then fill in the little hole and with a small paint brush touch up the already painted trim. It will look very finished and beautiful. I personally love the look of the dark treads with light uprights as in your after pic. Very classy and timeless. :)
