Take out the oak.
Hi I live in the UK and I use a product called Danish Oil, made of several oils, I use to finnish my worktops (you call them counters) I do a sand and recocoat obout every 2 years. As splash backs probably longer 4 years plus. Hope this helps.
An oak backsplash will be hard to maintain. You should use 4 to 5 coats of nonyellowing polyurethane to help protect it. If I were you, I would remove the oak and put up tile. I like porcelian tile. It's much easier to clean.
