Part of your question was cut off so not sure exactly what you are wanting to know but when I need to cut anything like dates, meat etc I have a pair of kitchen scissors made for that purpose. So much faster than with a knife.

Unless you have a good sharp knife and decent knife skills, use a pair of kitchen scissors. Hope that helps!
I have a very small electric food processor that works great for things like dates and raisins.
If your having trouble with sticking, try spraying some Pam or other food grade oil on the blades first. Easier to clean the knife or scissors afterward as well.
