If you want to! It looks very nice! Just make sure you use a really good paint and you tape off windows and around the trim. You want to be able to do it when it is warm so that you have plenty of good drying time and can open and close the windows. I would use Sherwin Williams Pro Classic Enamel paint. I used this to paint my kitchen cabinets and it wears very well. This is be a HUGE job so be prepared to take a few weeks to do it. You will probably need about 3 coats and you may need to prime first. I would take to the experts at the paint store to see what they recommend. If you need to paint inside doors you may consider taking them off and spraying them rather than painting by hand. You can rent a paint sprayer.
Totally a matter of personal preference. What are they now? At my house they are all painted. At my mom's house I left them stained as it fits with the style of the house built in the mid-20's and I like it so I am keeping it. What style are you going for? That should guide you as to whether or not to paint or not.
I prefer white or a light cream color. I think white just looks clean and bright and brings out all the color on the walls and furniture.

It really depends on the style and period of your home. I like stained, but you have to do what you like. I have had both in different houses and I think white is harder to keep looking clean.
