I want to paint the inside of my fireplace black. What Paint?

The house is black granite counter tops, walls are Moore "eon" and ceiling and trim is bright white. White IKEA cabinets. It is a combined living room, dining room and kitchen.

You must use paint made for this due to the heat. Talk to someone at a paint store.
You can use a black stove pipe paint. You do not say if you are using the fireplace. If so, you need a heat resistant paint.
We use a heat resistant bbq paint on our wood stove.
Use a high-temperature paint for your topcoats if you intend to enjoy a fire in the fireplace.
Also take care to do a proper cleaning of the fireplace before you start painting
