Oh, staining them grey would be lovely! Just remember, if you're not using a polyurethane with stain mixed in, don't use oil based poly as a sealer. It yellows. Good luck!
what are the cabinets made of?
You can mix grey Minwax stain with Wipe on poly and put an old sock over a rubber glove and wipe it on. Easy, have done this to darken the old golden oak cabinets for people.
Sounds like a lovely idea! I would suggest trying a gray gel stain for the cabinets
