Yes, the floor could be leveled. And it doesn't have anything to do with the tile, that's just an excuse for poor workmanship. They obviously wanted to take the easy way out. Did you hire them yourself or did you go through a store to find the installers? If you went through a store, tell them you want different installers to come out and fix it. If you hired them, I'd get their supervisor out there and show him what kind of job his people are doing. Either way, that's really ridiculous.
Amen to that. The floor could easily have been leveled first with self-leveling cement or a second sheet of underlay in spots.

The installer should have made sure the surface was level, it's not the tile or size of the tile that's the problem.

H*LL I agree with everyone. The floor should have been leveled with a self leveling cement compound. Another thing with large tile installs. They will show any imperfections even with the floor leveled. That can be compensated by buttering the tiles with thinset. This extra thinset makes leveling the tiles easier. They obviously didn't do that or possibly didn't even use a level on the tiles as they were laying them down. I would have them come and correct the problem or at least give you some kind of refund.
