Just go to any paint department and take home sample chips! When you narrow it down to a few, invest in a $3 bottle of sample paint. Try it on your wall and see what works best for you

We used one honestly called "cement". It was a Dutch Boy color, and it is a nice, warm gray that doesn't tend to lean towards one color or another. I have a similar problem finding a tan or khaki color. No matter what it looks like in the store, it looks like silly putty pink on my walls!!
So no blue, green or red undertones. Sounds like you're familiar with paint tones, so get a set of acrylic paints at the hobby store and mix up a shade of grey you like. Make a big swatch of it on a bright white masonite board (again can be bought at the hobby store). Take it to the paint store and have it matched. Good luck.
What I call the perfect 'dove grey', Abalone by Benjamin Moore.
Also, a lovely darker grey in that same tone by the same maker is Silver Fox. I have that all over my house and had the exact same issue as you when I started.
