I have used beadboard wallpaper and it worked great!

They do make a wallpaper liner that will help, if you want to wallpaper. If you have big holes or gouges you might want to fill them in a bit first.
Or you could skim a layer of drywall mud over it and sand it down then re-paint.
I'd recommend repairing the drywall every time over placing another layer on top to hide things that need repaired.
I had this problem when we first moved into our older home about ten years ago. our ceiling was cracked in the bathroom.
I tried a process that I had seen on a home improvement TV show.
you will need a box of ”pop-up” individual aluminum foil sheets that are used for wrapping potatoes for baking . And a jar of Modge podge, which you spread on a sheet and apply to surface , random is best for effect .they will have wrinkles, but good texture. Top coat with the Modge podge. Mine still looks good even with all moisture in bathroom

You can add a lightly texture product ( looks like sand) to the paint. I have used this and it worked great. I have real plaster walls - that are very old. This helped to cover some of the small imperfections that drove me crazy. I did not want any wall paper due to the problems when you remove it.
