I don't like dish washers. What to do with the space?

I had the dish washer removed when I moved to this house - not only was it iffy but I don't want one for several reasons. Now I have an empty space under the counter. I have a few ideas - space for garbage can, compost container, recycling containers and maybe a rolling rack for spices. I don't want it to be difficult to open as when I toss trash or compost my hands will be full and maybe dirty/messy.

Not sure of how it's laid out...maybe a stool n desk area...if room you could use a roll out underneath to the side for cookbooks. Some roll outs are thin like the ones you can use for in between a washer/dryer. Good luck.
If you are handy, why not make a pull out cart with only about 2 sheves to hold those small appliance we never have a place to store them? Pull it out, take out the appliance you want to use, push it back in and repeat when you are through with the appliance.
