Paneling should be easy to remove. If it's sturdy enough, you may be able to tile over it.
You can install any kind of material over it with no problem. Faux tin tile, self stick tile, wood slats, stencil, etc. If you go with ceramic tile use tile mastic as thinset will not hold.
