Container gardening
Hi Cathy, You could do a mass of container plantings. Using pots, it looks nice by placing large pots in back rows, medium in a middle row and lower plants/small pots in front. Or use kitty litter pans or square plastic dish pans with holes drilled in the bottom for doing square foot gardening - I've done that & it looks very cute with different colored containers.
Use big pots for plants. You can also use smaller things like old boots or cooking pots or ceramic mugs for smaller plants. Place the smaller ones on boards laid across concrete blocks. Probably be a good idea to drill holes in the bottoms for drainage. You can get a "ceramic" bit for your drill that will drill holes in most ceramic items. Thrift stores and yard sales are a good place to find things to hold plants. You can even use baskets if you line them with heavy plastic.
There is a guide on line regarding how much soil needed for “x” plant in a container. Are you doing veggies or flowers?
I have seen folks use just a bale of straw for tomatoes. It can hold 2 or 3 tomato plants and use Miracle Grow with the watering.
Rather than dig into the ground, use numerous (and various size & style) planters for eclectic gatherings - you can use blocks to vary the heights as well - just a thought. Good luck ;)
I've always done container gardening and trellis.
