It looks like you have a cupboard or drawers on the right side.... what about using a small sliding barn door to cover the under sink area... slide in front of the drawers for access and back when done..... (Google Search: how to make sliding barn door hardware using pipe)
consider this... you could find or make wood crates/boxes and put them on wheels (or on plant dollies) so they would roll in and out of the space under the sink for additional storage.
Check with your local home depot and lowes and see if they have any cabinets to fit under it. Then just cut the back where the pipe is, slide it in and attach to the walls.
A tension rod with a fabric curtain (perhaps made of a cut-down fabric shower curtain) could work in this spot.
Go to habitat for humanity and see if they have any cabinets. I know they all sell cabinet doors really cheap, and if you could build a frame, that's all you would need. Good luck, I would love to see the finished project.
It is possible to purchase bottom pre-made bottom vanity cabinets without the tops on, that can slide underneath your countertop. Depending on what tools you have, by the time you price out all the lumber, hardware, and other necessary materials for building your own cabinets, it may be more cost effective to purchase ready-made.
