The above article is eloquently more informative than I can be. I particularly like their suggestion to include uplighting to show off, as well as visually enlarge your space.

Be sure to include lighting directly over the stove and counters.
I too spent many years with my back blocking the light from my mid-ceiling fixture. We redid the kitchen, and lighting was one of my first priorities. Do Not limit yourself to lighting offered by HD and Lowe’s. Houzz.com and Pinterest have lots of great ideas, and you can google “wood-beam lighting” as well.
Take your time planning and picking. Have fun with this.
We are in the middle of a remodel as well. For things like this I take photos of my project on my smart phone & ask someone in Home Depo.
