Using pallet wood is not recommended for use as a backsplash covering. Because the wood is uneven and not level, it will be very hard to try to attach with any stability to the wall. Because the wood is dirty and porous, there is no guarantee that it has not absorbed insect residue or other substanses that may be unsafe or even caustic.
In a kitchen you need materials that are impermeable, with a closed surface that will be easy to keep clean and disinfefected.

If you plane or sand both sides of your pallet boards then seal them properly (maybe with a marine varnish) it might work for you. I've seen pallets used for furniture, so I don't see why not. Best of luck.
