Can you post a picture?
Can you make one closet into something unusual like maybe a beauty station for a girl or a desk or sport station for a boy. Maybe a storage unit using decorative boxes. Whatever you do incorporate under the windows if you can.
What's the problem?
Paint wall and trim. Then add a valance at the top of the windows to compliment the wall color. The valance could be the theme of whatever interests your kids (baseball, race cars, etc). Use large book shelving units to help organize stuff like books, trophies, framed pictures, etc). Closet organizer could be very helpful to make the most of available closet space. Those can be picked up at Walmart a decent prices. If you are going to hang posters or such on the walls consider Command hangers. They will hold a good amount of weight buy when you take them down they don't leave any holes or marks on the wall. Use a long shelf that spans one wall for collectibles. If you put this up high towards the ceiling you won't lose valuable floor space. Take this time to repaint the kids dressers and nightstands to coordinate with the room's theme.
