I would consider putting pull out drawers in the space. Something like this article but make the pull out an even height on all sides. I don't have a picture of mine right now but they are about 6" tall on all sides. Although I have doors covering mine, I wouldn't mind if I didn't.
I did exactly that cause I never use a dishwasher. Framed it out with 2x2s, added a shelf at the back and left front part more open to store gallon jugs. I put an old matching pair of cupboard doors on it I had in the garage that matched the cedar perfectly. You could take your measurements and go to Habitat for Humanity Restore and find a set of doors, I've seen them for $5-$10.
