Copper sheeting, aluminum sheeting, metal tile, ceramic tile all would look nice, provide a heat shield and be easy to clean.
Using any material that is not flame proof or fire retardant for a backsplash near a stove is not recommended.

It kind of depends on what you want it to look like. The simplest thing would be to place a piece of tempered glass over it and screw it to wall. You could also paint/stain/tile it before putting it up...
