How do I fix the pipes that are knocking when the AC is running?
When I turn on my AC, I can hear pipes rattling or knocking together. Is that air in the pipes or some other pending disaster.

No pending disaster. It's the expansion and contraction of loose pipes. You need to find where they are loose and tighten support bands or wrap insulation around them.
Use foam pipe covers to avoid the clanging. If it’s not a hot pipe. U can use pool noodles inexpensive at the dollar tree and very long.
I don't have access to the pipes short of crawling under my home - Manufactured home.
You would need a heating and cooling guy.
If you don't want to go under there, get a handyman or a helpful relative or neighbor. Have the noodles/rags/anything to keep them from banging together ready to give to the helper.
