I don’t think you could do that but you could stain the wood left there
What happened with the original veneer? Could you not re-glue it back on the cabinet? Is it damaged badly? Could it be refinished or re-stained?

You will need some skills to replace all that veneer on the lid. It is curved over the top, so that takes some knowledge to do without cracking the veneer. You would be better off, pulling all the veneer off and sanding the wood and stain and varnish it. Or paint the wood.
Staining a damaged sewing machine cabinet top is not a recommended solution, as it does not correct the unevenness in the surface. Fabric will catch on any raw, broken, sharp, or rough edges, and will not glide smoothly when going through the sewing machine.
It is best to completely recover with new.
