Build the shelves on the workbench, including the sides, to fit inside the cabinet and just slide it in.
I think that space would be just perfect for large trays, cookie sheets and anything standing on edge. I had a trash compactor and due to the depth, I would not put shelving as things would get pushed to the back and because the opening is not too wide, they'd get lost.
I'd put two or three vertical dividers in the space. Get a door that has a frosted glass in it for an updated look. It's also easier than trying to match the other doors.
I rebuilt the space where an old dishwasher was under my counter using 2x2 lumber to frame it out, then added 2 cross pieces between the side frames, and added a shelf towards the back and used the lower part to store the gallon sized jugs of cleaning supplies.
