Sand is what's commonly used between bricks, pack it in and sweep away leftovers
This one can be tricky based on the climate you live in. Here in Michigan the ground freezes and thaws throughout the winter which can make pavers move. Patio bricks can sometimes shift because the substrate isn't great underneath. One product you could try to use is Paver Set. Its a fine sand that can seal pavers and bricks. This product is awesome, we used it this past summer when we refreshed our patio area. Good luck!

If your pavers are rocking and are loose, they are not sitting flat in the base material. Your pavers may have been set in sand or stone dust. You need to use a similar material. You Remove each loose paver and adjust the base material so the paver is flat and level with the other pavers around it. Then you can refill the joints. If the pavers are sitting flat and the joints are tight, then they should not move. I personally am not a fan of sealing pavers and sealing will not prevent movement.
