You can apply a gel topcoat. I applied 3 coats of polyurethane to my dining table and it looks like glass.

Three coats of a water based polyurethane. Water based does not yellow over time like oil based does.
Yes! If you're using General finishes Gel stain (it is oil based) they recommend using using an oil based poly to seal it. BUT, I have used a water based over oil based gel stain and it has worked fine! :) You can check out how I used gel stain and sealed a hutch here. :)
