I find vinegar and dawn dish soap works great to remove grease (2 parts vinegar to 1 part dish soap), and it's gentle...but test a small area first because depending on how old the cabinets are and what they are sealed with will determine how well you can clean them without damaging them! Hope this helps!
I would use something like Pine-Sol, or Murphy’s oil soap, something that has an oil based component to it.
I would put it on there with a sponge, and then take a clean white rag and wipe it off after it has softened the stains. I would use my fingernail over a nylon scrubber, as I can feel what I’m doing.
The stain on your cabinets should be covered with a polyurethane or a varnish, depending on how old it is. It should be safe.
If that finish itself is gummy, then you’re looking at a more complicated process.
Warm soapy water cleans most. If they are really crusted like we found in some rentals, there is an auto degreaser that works on the cabinets and will not hurt them. Use a tooth brush on a small surface like 6 inches by 4 inches and scrub it on, then let it soak and set for 10 min. then scrub again and remove it, wipe it clean and do the next section. It takes a while but it really does work. Meguiars auto degreaser does NOT hurt the cabinets and will remove the grime. Here is a photo, get it at an auto supply store.
Original Avon Skin so Soft on a scrubber sponge. They say it will even take tar off your car. It shouldn't hurt a polyurethane finish but try on an inconspicuous spot.
