Every one that came even close to what you want, that I have seen, was one that you had to purchase. I did see one that looked more like a peacock that was made by welding an iron base. You obviously need something to hold the bottles. Perhaps you could insert dowels in a fan pattern into a wood base then fashion a turkey head from there. You also might be able to find a wine bottle holder that has the right shape for a turkey tale and insert your bottles in that. I'd look around thrift stores to see what you can find. Wishing you the best.
Maybe take a old bleach large bottle put holes all along the back to hold all the bottles for the tails then you need a head and wings close to body
