You can definitely do that. I would think going with an off white and adding a glaze would help to make them blend with the lowers. You can also do a light color light Sea Salt.

You would have to take off the finish lightl y. Sand or remove varnish with remover then if there not your color you will eather paint them or stain a lighter color if the cabinet is a darker wood you won’t be able to stain it lighter you. Will have to paint it lighter color with paint .
You can do that. Some people don't like the wood so they paint the bottoms a darker color and the uppers a white, cream or lighter color.
