I love floating shelves but have not made one. I purchased 2 from IKEA for my daughters room years ago and looked at them and they are similar to these videos but using metal rods instead of wood blocks. For a Cedar Beam you will want to go heavy duty with support screwed into numerous studs on the wall where hanging.

If you decide to use a wood plate with steel rod/bolts are attached screwed through plate to hold beam and attached to wall - you will need to hollow out a groove the depth , width and height of wood plate to make beam flush to wall. There is no easy way to make the groove.. Lots of cuts with a radial saw to the depth you want and then chisel out. Would think the groove surface will be quite uneven so probably would go 1/4" deeper than plate depth so can get a flush fit.
