You can use cedar as it has a natural termite repellant in it. Treated wood cannot be used unless you keep the vegetable plants at least 10 inches away from the plant.
Cedar is always recommended, however the thicker the wood the better because eventually it will all rot and need to be replaced. I however use pine 2 x 4's, 2 x 10's, and 2 x 12's. Untreated they can last a good 4 - 5 years. I've also had a positive experience using landscaping timbers.
Cedar will not harm plants, and hold up the longest untreated. You could also try recycled metal sheets, held up with wood posts on the outside.
