The weight of the extra adhesive, grout, tile could tear off the wall along with the old tile.

If you can match the white tiles perhaps you could just remove the top run or two, add some glass mosaic tiles and then cap with white bull-nose. Most back splash tiles are applied with mastic spead on the drywall. After you remove the tiles you would need to remove most of the dry mastic without tearing the drywall paper.
I used some of the plastic wall board that looks like the old tin that they used back in the 20/30 just put liquoI'd nails on old tile and pressed on looks good.
Paint & seal them. There are stencils that might help decide on a pattern.
Maybe try out the peel and stick tiles. That might work better. There are endless options.
