I bet your quartz is beautiful! How about if you find a matching rubberized mat and put in the areas you use a lot for the noise. And when you're doing a lot of cooking, move it! My concerns with the other surfaces is food and germs.
Never lower the value of your house by 'covering something up'. Especially the kitchen which is the highest valued room in the home. Use mats, cutting boards, etc. And I would certainly not DIY an enire laminate counter top unless you are a pro, as you are guaraneeting pop up corners, seams and edges and a future of regluing and ungluing things.
Hello S; What I would suggest is that you contact a Handyman. I am not at all familiar with quartz. It looks beautiful, but if you are not happy, I can understand wanting to change things around!!
Also, Please lets both hope that the Butcher block will be the same fit as your quartz. I do not see how you would have to replace your cabinets....
