Check Pinterest. They have lots of design ideas then you can determine what is best for you, your location, your budget, your willingness to do manual labor, and what your intended use is. A local nursery would be a good place to ask for advice once you have defined what "do/redo" means to you.
Do vertical gardening by hanging plants on your fence. If you don't want grass, grow a low maintenance ground cover suitable for your area. Have pots and planters with your favorite plants and flowers in the patio area.

Have you looked at temporary canopies ? Shade structures ? even a tent ? I have seen some with screen walls. I would plant vines to grow up the fence. Check with local nurseries to see what would be easy in that climate. Remember you want it to be pretty short. No 30 foot vines on a 6 foot fence.
