Talk with a LOCAL nursery... they will have varieties of plants and grasses that will work best with pavers.... some like creeping Thyme have a pleasant scent when stepped on.... I have seen some of the TV DIY guys use artificial turf... if you don't want to have to trim the real stuff
I would go with a short grass species like mondo grass.... https://www.google.com/search?q=mondo+grass+lawn&client=opera&hs=lvH&tbm=isch&tbo=u&source=univ&sa=X&ved=0ahUKEwim04r76s7ZAhUGxYMKHSiKA6wQsAQIRg&biw=1326&bih=631 or one of new golf course grass hybrids that get no longer than 3", irish moss also looks really nice between pavers.
