How do I lighten dark granite countertops?

Any way to update dark granite counters to lighten them

Not really. That's the way mother nature made them. If you paint or do any treatment to them, it devalues your home. So think twice. If that doesn't matter, you can paint them.
No, God made it that way. Can't bleach granite. Only thing would be replace or paint. Paint will ruin it and not hold up. Sorry.
Why not simply paint walls a very light color in a satin finish or semi gloss, to provide greater contrast? Use light colored kitchen towels, placemats, curtains, etc.
