Do u mean the fake wood paneling? Or like shiplap?
Mid it’s the fake paneling, u can use simple joint compound to fill in all the lines, then sand and paint. If it’s shiplap, bygod paint it white and enjoy it!! Lol!
Been there done that! Just make sure u prime first or use a good paint+primer like kilz. If it’s “fake” wood don’t sand, unless ur using REALLY low grit sandpaper(like200+)
Don't sand just clean. Test a area to make sure the film won't bubble up. Prime with "stick it" (made to go over wallpaper) if ok, just paint. Latex is ok.

Wood does not take paint well unless you prime it first. I use Kilz
