I like white but Stark looking, looks like they were sealed

Paint them a different color, or change the hardware.
How about sanding them roughly and then applying a coat of stain that will stick to some spots and not others? Keep in mind that I have never tried this, it just popped into my head.
Sand, wipe down with damp cloth, allow to dry, paint and apply new hardware.
