Refinish a kitchen table. What type of top coat to use?

After I have removed the present finish and restained the table, what type of top coat (an how many coats) should I use to protect the finish? This table get a lot of use.

I would apply polycrylic this gives a durable finish without yellowing. Because you use your table a lot I would do at least 5 coats sanding lightly in between each coat.
