Stainless steel. Any other metal will be affected from moisture and heat. Home Depot or Menard's. Take the handle with you. Can be coarse or fine thread and U.S or metric.
I used a outdoor spigot handle and an aluminum screw. But, I was worried more about functionality vs eye appeal. But, it still works great and no issues on rust. Don't forget the washers on each side of the glass....
