im not sure what you mean by gritty. Was there a matte finish, which might feel more like very very fine sand paper? If gritty in spots, you might have adhesive residue. You could try a solvent like denatured alcohol, but I would start with a non scratch scouring pad. There are sanding options but there are a lot of varibales. You should check with a company that does counter installs or provide more information here.
how old are the countertops?
Sounds like the sealer has worn off, I would get the stone guy to come in and polish and reseal them.
Use a granite polish.

Sorry to tell you this but it sounds like a poor grade granite that hasn't been rasined.

I'm a fabricator in Iowa and we've come across this several times, especially with lower priced, lower grade granite colors. Always inspect your stone before purchasing. I can't write it enough.
Try cleaning them really well and then reseal them with a granite product available at your local hardware store.
