The covering for yours should be UV rated and can withstand wind, rain and snow. You could fill in the windows with plexiglass that fits that criteria. Home Depot carries this product.
What is the dome made of? Can it be fixed to the ground to it doesn't blow over? A picture would be helpful.
In Austin Texas there used to be a business called Utopia Domes that was a geodesic dome on a huge scale used to house a landscape company.
I know this isn't what you're asking, but if that doesn't work and you want something that will be pretty and bear fruit, I'd plant a climbing grape vine around it. My sister has one that comes back every year. It looks amazing in her yard and it bears fruit.

In a warm climate plastic stretched over the frame would work in colder climates you could double the plastic layers but you need a air cushion so the two layers don't touch. The air pocket you make doing this helps to keep the heat inside.
