get the book appraised before you start taking it apart ... could be an Antiques Roadshow item !!! there are book appraisers on line and your local library may have contacts

  It is falling apart and from what I understand not worth a great amount. It is a book my great grandfather sold to get through medical school.

Add lace or a vintage doily to the outside and use them as decor :)

I like your idea about framing them. You could group them with matching frames and matting.
